Asida – Sudan & North Africa

Asida is a simple, comforting dish made by cooking flour into a smooth, dough-like pudding, then serving it with butter/honey (sweet) or savory sauces. Warm, filling, and perfect for Ramadan. 

Serves: 4 people

Ingredients

  • 2 cups water (plus a little extra if needed)

  • 1 cup wheat flour (or sorghum flour for a more traditional Sudanese version)

  • ¼ tsp salt

Sweet topping (classic)

  • 2–3 tbsp butter or ghee

  • 3–4 tbsp honey (to taste)

  • Optional: pinch cinnamon

Step-by-step

1) Get everything ready (this moves fast!)

  1. Put your flour in a bowl and keep a whisk/spoon ready.

  2. Boil a kettle of extra water (just in case you need to loosen it later).

2) Start the base

  1. In a pot, bring 2 cups water + salt to a boil.

3) Add flour slowly (no lumps allowed)

  1. Reduce heat to low.

  2. Sprinkle in the flour gradually, whisking constantly.

    • Don’t dump it all at once or you’ll get lumps.

4) Stir and cook until it thickens (arm workout time!)

  1. Keep stirring firmly. It will start looking like thick porridge, then a soft dough.

  2. Cook 8–12 minutes on low heat, stirring continuously.

  3. If it becomes too stiff, add a splash of hot water and keep stirring until smooth.

5) Shape it (the traditional look)

  1. When it’s smooth and pulls away from the sides of the pot, it’s ready.

  2. Wet a spoon slightly and scoop it into a bowl.

  3. Shape it into a mound (like a dome).

  4. Make a small dip in the centre for your topping.

6) Add the topping (best part!)

  1. Melt butter/ghee and pour it into the centre.

  2. Drizzle honey over the top.

  3. Optional: sprinkle a pinch of cinnamon.

Serving ideas

  • Serve warm after iftar as a comforting sweet dish

  • Some people enjoy it with dates on the side
